Golden clover honey slow-infused with organic hibiscus flowers, tart, floral, and beautifully pink-hued. This honey was inspired by my daughter, who didn't like the taste of herbal teas. I made it for her to stir into her tea, and it became one of my favorite infusions.
The flavor: Bright and floral with a gentle tartness that cuts through the honey's sweetness. Hibiscus adds a fruity, berry-like complexity and gives the honey a gorgeous rosy blush. It's tangy, sweet, and unexpectedly sophisticated, somewhere between a floral jam and a fruit-forward honey.
